4 chicken thighs or chicken breasts
1 can, crushed tomatoes
1 T, minced garlic
1 C, dry sherry
1. Heat a skillet to medium heat.
2. Season chicken on both sides with salt and pepper.
3. Add olive oil to the pan, and brown chicken on both sides.
4. Add the diced tomatoes, garlic, dry sherry, paprika, sherry vinegar, and brown sugar to the pan. Cook until slightly reduced and sauce begins the to thicken.
5. Adjust seasoning with salt and pepper.
6. Serve with your favorite vegetables and grain.
