BBQ Chicken Salad


BBQ Vinaigrette
3/4 cup BBQ sauce
1/4 cup rice wine vinegar
3/4 cup extra virgin olive oil

2 cups green leaf lettuce, chopped
1 cup grape tomatoes, halved
1 cup blue cheese crumbles
1/2 cup chopped scallions
1/2 cup roasted peanuts, chopped
1/2 roasted chicken, skin discarded and meat pulled from bones
1/2 cup BBQ vinaigrette (see recipe above)


1.To make the vinaigrette: In a medium bowl, whisk together BBQ sauce and vinegar. Slowly drizzle in
olive oil until sauce is creamy and loosely emulsified.
2. To make the salad: In a large bowl, toss together lettuce, tomatoes, blue cheese, scallions, peanuts and
chicken. Pour vinaigrette around the inside perimeter of the bowl, then toss until salad is lightly coated
with dressing, adding more if desired. Serve.
