Chicken + Broccoli Mac And Cheese

INGREDIENTS

  • 4 chicken breasts, boneless skinless

  • salt and pepper to taste

  • 1 1/2 tsp oil

  • 2 tbsp unsalted butter

  • 2 tbsp all purpose flour

  • 1 cup white onions, diced

  • 2 cups whipping cream

  • 1 cup grated Gouda cheese

  • 1 1/2 cup grated sharp cheddar cheese

  • 1 cup shredded provolone cheese

  • 2 cups pasta shells, freshly cooked

  • 1 small head of broccoli, cut into florets and steamed

  • chopped chives for garnish

PREPARATION INSTRUCTIONS

  1. Place Lodge cast iron dutch oven over medium heat

  2. Season chicken with salt and pepper

  3. Add oil and cook chicken until internal temperature of largest piece of chicken reaches 165°F

  4. Remove chicken onto clean plate

  5. Melt butter

  6. Stir in flour until butter and flour are well integrated

  7. Reduce temperature to low medium heat, add onions and cook 1 – 2 minutes until translucent

  8. Slowly stir in cream and mix well until well incorporated

  9. Bring cream mixture to a simmer and slowly add cheese

  10. Season with salt and pepper

  11. Add chicken, broccoli, cooked pasta shells

  12. Mix well

  13. Garnish with chopped chives, serve and enjoy!
