Chicken Chip Bites


  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks

  • 2 cups low-fat buttermilk

  • 3 cloves garlic,  minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon red chili flakes

  • Kosher salt and freshly ground black pepper, to taste

  • 3 cups crushed Sour Cream and Onion Potato Chips

  • 1/4 cup unsalted butter, melted

  • 2 tablespoons chopped fresh parsley leaves

  • Add sugar, plain yogurt (to buttermilk for dredging)


  1. Preheat oven to 400°F.

  2. Combine garlic, sugar, yogurt, chicken, buttermilk, salt, pepper, red chili flakes, thyme, and oregano in a bowl. Dredge all chicken in chips and place onto pan.

  3. Bake until crispy and the internal temperature reaches 165F.

  4. Enjoy!
