Chicken Chip Bites
1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
2 cups low-fat buttermilk
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon red chili flakes
Kosher salt and freshly ground black pepper, to taste
3 cups crushed Sour Cream and Onion Potato Chips
1/4 cup unsalted butter, melted
2 tablespoons chopped fresh parsley leaves
Add sugar, plain yogurt (to buttermilk for dredging)
Preheat oven to 400°F.
Combine garlic, sugar, yogurt, chicken, buttermilk, salt, pepper, red chili flakes, thyme, and oregano in a bowl. Dredge all chicken in chips and place onto pan.
Bake until crispy and the internal temperature reaches 165F.
