Chicken Milanesa

INGREDIENTS:

2 Springer Mountain Farms chicken thighs

1 c all-purpose flour

4 eggs, beaten

1 c panko bread crumbs

¼ c canola oil 

1 Vidalia onion, sliced

3 tbsp butter

¼ c peanuts

¼ c green onions, sliced

¼ c fresh parsley

1 Lemon


INSTRUCTIONS:

Salt both sides of chicken thigh. Coat in flour, dip in egg, then coat in panko bread crumbs. Heat oil on medium-high in cast iron skillet and add chicken to skillet. Cook until brown or chicken is done, about 10 minutes. Set aside.

In same skillet, add sliced Vidalia onions and butter. Cook until soft and lightly brown. 

Top chicken with cooked onions and peanuts, green onion, and fresh parsley to taste. Add halved lemon to the plate. Enjoy!
