Greek Chicken Farro Bowl

1 cup, Farro cooked
1/4 cup, cucumber slices
2 T Black Olives, pitted and halved
1 cup Cherry tomatoes, halved
5 oz. super green salad mix
1/4 cup Feta, crumbles
Grilled Chicken Breast
2 tsp, red onion
2 T red wine vinegar
2 T lemon juice, with zest
1/2 tsp, salt
1/4 tsp, pepper
1/2 tsp, dried oregano
1/2 cup olive oil

1. Cook farro according to package instructions, season with salt and pepper once cooked.
2. In a bowl add red onions, then whisk to combine red wine vinegar, lemon juice with zest, salt, pepper, dried oregano, and feta crumbles.
3. Cut chicken breast into bite size pieces. Halve black olives and tomatoes. Cut cucumber in half and then cut the halves lengthwise to produce small 1/2 size
4. Place super greens into the center of a serving bowl. Then add the farro, tomatoes, chicken, kalamata olives, and cucumbers to the bowl.
5. Finish the SMF chicken grain bowl with dressing and serve!
