Hearty Chicken Soup

INGREDIENTS

  • 3/4 cup celery, sliced

  • 1/2 cup onions, chopped

  • 3/4 cup carrots, sliced

  • 1/2 cup potatoes, cubed

  • 1 cup button mushrooms, sliced

  • 1/4 cup parsely, snipped

  • 7 cup chicken broth

  • 1 bay leaf

  • 1/2 tsp ground thyme

  • 1/2 tsp red pepper flakes

  • 1/2 tsp pepper

  • 2 Springer chicken breasts, cubed

  • 2 tbsp lime juice

  • 1 1/2 cup kale, chopped

PREPARATION INSTRUCTIONS

  1. Combine carrots, celery, onions, potatoes, mushrooms, parsley, chicken broth, and seasoning into a pot and bring to a boil.

  2. Reduce to a low to medium heat after it boils.

  3. Simmer for 10 minutes until onions and celery are softened.

  4. Add chicken and remove bay leaf.

  5. Cook the chicken for about 8 minutes or until the internal temperature reaches 165°F.

  6. Add lime juice and kale.

  7. Cook until kale welts.

  8. Serve and enjoy!
