Pimento Cheese Chicken Poppers

2 Jalapenos, seeded and cut into 4 pieces each

4 slices of thick cut bacon, cut in half

¼ cup, AP Flour

2 T, brown sugar

1 tsp, Cracked black pepper

2 Chicken breast, cut into 1 inch sized pieces

Preheat oven to 400F.

Cut the tops off the jalapenos and then cut the pepper lengthwise to remove seeds from the jalapenos. Cut each half into two large pieces. Evenly combine flour, brown sugar, and black pepper in a small bowl. Dredge each piece of bacon in the flour mix and shake off excess. Lay the bacon flat on a cutting board, place a piece of jalapeno at the end closest to you, top with a piece of raw chicken, and then roll away from you and secure with a toothpick once wrapped in bacon. Heat a large cast iron to medium heat and sear both sides until crispy, about 5-7 minutes. Transfer cast iron pan to oven and finish cooking for about 12-15 minutes or until chicken is cooked completely through and the bacon is crispy. Remove from the oven and drizzle each hot chicken bacon bite with honey.
