Roasted BLT Chicken Salad


Buttermilk Dressing
1/2 cup mayonnaise
1/3 cup buttermilk
1/4 cup sour cream
Juice of 1/2 lemon
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
Kosher salt

1/2 roasted chicken, skin discarded and meat pulled from bones
2 cups Bibb lettuce leaves, torn
1 cup grape tomatoes, halved
6 strips cooked bacon, cut into 1-inch pieces
3/4 cup freshly toasted croutons
½ cup buttermilk dressing

1. To make the dressing: In a medium bowl, whisk together all ingredients until smooth and creamy.
2. Season to taste with salt.
3. To make the salad: In a large bowl, combine pulled chicken, lettuce, tomatoes, bacon and croutons.
Pour dressing around the inside perimeter of the bowl and toss to evenly coat all ingredients with the
dressing. Divide salad among plates and serve immediately.
