Summer Chicken Chopped Salad


3/4 cup buttermilk ranch dressing, preferably homemade
1/4 cup chopped basil
1/4 cup chopped Italian parsley
1 tablespoon chopped chives

1 boneless chicken breast, cooked and diced
1 cup diced zucchini
1 cup diced yellow squash
1 cup halved grape tomatoes
1 cup cooked green beans, cut into bite-sized pieces
1 ear yellow corn, shucked and kernels cut off the cob
1 avocado, pitted and diced
½ cup walnuts
Kosher salt and freshly ground black pepper

Total: 30

1. To make the dressing: In a medium bowl, add all ingredients and stir to combine.
2. To make the salad: In a large bowl, toss together all ingredients until thoroughly combined. Add
dressing and toss to completely coat all ingredients. Season to taste with salt and pepper. Serve
