Cuban Chicken w/ Black Beans

Ingredients

Seasoned and Grilled Springer Mountain Farms © Leg Quarters

  • 1 each canola, non-stick spray

  • 3 each Springer Mountain Farms © leg quarters

  • 1 teaspoons cumin

  • 1 teaspoon cayenne

  • 1 teaspoon black pepper

  • 2 teaspoons oregano

  • 1 teaspoon salt

Cuban Chicken Sauce

  • 1 ½ cups onion, medium dice

  • ½ cup celery, medium dice

  • ½ cup garlic, minced

  • 1 each orange zested and juiced

  • 1 quart chicken stock

  • 2 each fresh oregano sprigs

  • 2 each bay leaves

  • 6 each ½” onion ring, slices

Cuban Style Earth Fare © Black Beans

  • ½ cup onion, medium dice

  • ½ cup celery, medium dice

  • ¼ cup garlic, minced

  • 1 each canned Earth Fare © Black Beans

  • 1 teaspoons cumin

Plating (optional)

  • 1 cup cilantro, rough chop

Preparation

For the Seasoned and Grilled Springer Mountain Farms © Leg Quarters:

  1. In a small bowl, mix until well integrated: cumin, cayenne pepper, black pepper, and dried oregano; set aside

  2. Next, on a clean large plate lay all leg quarters, skin side up. Season chicken with seasoning mix evenly and on both sides. Once seasoned to the desired state, make sure to help rub the seasoning into the chicken

  3. Now finish the seasoning process by sprinkling both sides evenly with salt

  4. With a grill pan over medium-high heat, spray the pan when ready to grill with canola oil or any high smoke point oil

  5. Sear the leg quarters, skin side down for 15-20 minutes or until grill marks are prominent and char has become developed

  6. Remove leg quarters from grill and place onto a clean plate

For the Cuban Chicken Sauce:

  1. In a high-walled skillet over high heat, add all ingredients except for the sliced onion rings together and stir until well integrated

  2. Allow mixture to come to a boil, then reduce heat to medium

  3. Carefully place Seasoned and Grilled Springer Mountain Farms © Leg Quarters skin side up into the Cuban Chicken Sauce

  4. Layer on top of the Seasoned and Grilled Springer Mountain Farms © Leg Quarters with a few rings of sliced onions

  5. Allow contents to simmer while covered for 15 minutes

  6. Now set aside for Plating

For the Cuban Style Earth Fare © Black Beans:

  1. In a small sauce pot over medium heat, add all ingredients and stir gently occasionally for 15 minutes or until mixture of heated thoroughly

  2. Put contents into a bowl and set aside for Plating

Plating:

  1. Take a plate and add roughly ¾ cups of the Cuban Style Earth Fare © Black Beans onto the center of the plate

  2. Next, place a serving of the Seasoned and Grilled Springer Mountain Farms © Leg Quarters on top and spoon 2-3 Tablespoons of Cuban Chicken Sauce on top of the Seasoned and Grilled Springer Mountain Farms © Leg Quarters

  3. Sprinkle desired amount of cilantro on top

  4. Serve and enjoy!
