Southeast Asia Inspired Chicken Satay w/ Two Homemade Dipping Sauces

Soy-Seasoned Springer Mountain Farms © Chicken:

  • 4 each Springer Mountain Farms © chicken breast, sliced on bias, ½” thick strips

  • 1 cup soy sauce 

  • ½ cup cilantro, chopped

Peanut Dipping Sauce:

  • 2 Tablespoons ginger, peeled and finely diced

  • ½ teaspoon garlic, pasted

  • ½ cup Earth Fare peanut butter, smooth

  • 2 Tablespoons tamari

  • 1 teaspoon lime juice

  • 1 teaspoon light brown sugar

  • ½ teaspoon red pepper flakes, crushed

  • Optional: 4-6 Tablespoons water

Cilantro Dipping Sauce:

  • 1 cup cilantro, washed

  • 2 cloves garlic

  • 2 whole scallions

  • ¼ cup lime juice

  • 2 Tablespoons sesame oil

  • 1 tablespoon salt

Grilled Springer Mountain Farms © Chicken Satay:

  • 1 each non-stick canola oil spray

  • Soy Seasoned Springer Mountain Farms © Chicken


  • ½ cup cilantro, chopped


For Soy-Seasoned Springer Mountain Farms © Chicken:

  1. In a small mixing bowl, add soy sauce and cilantro and give it a quick stir

  2. Next, add chicken and ensure the chicken is either submerged or has been covered by the soy sauce and cilantro

  3. Place plastic wrap over mixing bowl and refrigerate at least 45-60 minutes before grilling

  4. Now take 12” wooden skewers and skewer chicken

For Peanut Dipping Sauce:

  1. In a small mixing bowl, add Peanut Dipping Sauce ingredients and mix well with spoon until fully integrated
    Note: Depending on your consistency of Peanut Butter, you may need to add a few Tablespoons of water at a time; mixing well and ensuring full integration before adding a few more to get a consistency perfect for dipping

  2. Set aside until Plating

For Cilantro Dipping Sauce:

  1. In a  blender, add Cilantro Dipping Sauce ingredients

  2. Ensure cap is placed on tight onto the blender to prevent any spillage. 

  3. Now, turn blender on medium-low setting

  4. Blend for (TIME) or until smooth
    Note; water may be added if ingredients don’t blend and once blender is stopped, if necessary - carefully push down cilantro with blender tamper

  5. Set aside until Plating

For Grilled Springer Mountain Farms © Chicken Satay:

  1. Heat cast iron grill pan over medium-high heat for 3-5 minutes or until grill starts to show smoke

  2. Spray thin layer of oil onto grill top

  3. Place chicken skewers onto grill, cooking for 4-6 minutes on each side or until internal temperature hits 165 F

  4. Set aside for Plating


  1. On a large clean plate, place a few of the Springer Mountain Farms © Chicken Satay onto center of plate

  2. Using a spoon, scoop Peanut Dipping Sauce and Cilantro Dipping Sauce into separate small dipping bowls

  3. Add desired amount of Garnish

  4. Serve and enjoy!
