Chicken Chorizo Queso Flameado

Springer Mountain Farms © Chicken Chorizo:

  • ½ pound Springer Mountain Farms © ground chicken

  • ½ pound chorizo sausage, no casing

  • 1 tablespoon smoked paprika

  • 1 tablespoon apple cider vinegar

  • ½ Tablespoon cayenne powder

  • ½ cup garlic, chopped

  • 1 teaspoon oregano, dried

Queso Flameado:

  • ¼ cup Earth Fare whole milk

  • 1 cup mozzarella cheese, shredded

  • 1 teaspoon flour


  • 4 cups all-purpose flour

  • 1 teaspoon salt

  • 2 teaspoon baking powder

  • 2 Tablespoon lard

  • 1½ cup water

Plating Garnish:

  • ½ cilantro, chopped


For Springer Mountain Farms © Chicken Chorizo:

  1. In a medium mixing bowl, add chicken, chorizo sausage, paprika, apple cider vinegar, cayenne powder, garlic, and oregano

  2. Mix ingredients in bowl together with wooden spatula until ingredients are fully integrated

  3. In a medium skillet over medium-high heat, melt butter completely and then add in Springer Mountain Farms © Chicken Chorizo mixture

  4. Cook Springer Mountain Farms © Chicken Chorizo for 3-5 minutes or until chicken is cooked through

  5. Pour out excess oil and turn heat off and set pan with Springer Mountain Farms © Chicken Chorizo aside temporarily

For Queso Flameado:

  1. In a small sauce pot over medium-high heat, add milk and allow to come to a boil

  2. Next, add shredded mozzarella cheese and stir mozzarella with milk for 5-7 minutes or until milk and mozzarella fully blends together

  3. Add flour and continue mixing for 2-3 minutes

  4. Set aside Queso Flameado temporarily

For Chicken Chorizo Queso Flameado:

  1. Preheat oven to 325 F

  2. In a 6” cast iron pan (or any 6” bake proof pan/dish), add ¼ of Springer Mountain Farms © Chicken Chorizo into the pan, layer on top ¼ of Queso Flameado and continue alternating until the Chicken Chorizo Queso Flameado has filled up the 6” container with about ⅛” head room

Note: important to leave some space

  1. Place Chicken Chorizo Queso Flameado into oven for 5-7 minutes or until cheese is bubbling

  2. Now turn oven to broil and broil Chicken Chorizo Queso Flameado or until cheese is golden brown

For Tortillas:

  1. In a medium mixing bowl, add all purpose flour, salt, baking powder and mix until integrated

  2. Next, mix lard in by hand

  3. Add water until dough forms

  4. On a cutting board or clean surface, sprinkle flour and add dough

  5. Roll into 2” balls

  6. Now with a tortilla press, open press and place a 2” ball in the center; flip press closed and remove flattened tortilla and set aside

  7. In a cast iron pan over medium-high heat and cook tortillas on each side for 40 seconds or until spots of golden brown show on the tortillas

  8. Cook all tortillas as mentioned in step 17 until all cooked

  9. Set aside until Plating


  1. Garnish bubbly hot Chicken Chorizo Queso Flameado with chopped cilantro

  2. Serve with toasted Tortillas

  3. Enjoy!
