Jerk Chicken on Naan w/ Mango Salsa

Ingredients

Springer Mountain Farms © Jerk Chicken:

  • 4 each Springer Mountain Farms © Chicken Breast, boneless/skin on

  • ¼ cup canola oil

  • 1 Tablespoon cayenne powder

  • 2 teaspoon onion powder

  • 2 teaspoon thyme, dried

  • 4 Tablespoon parsley, chopped

  • 3 teaspoon sugar

  • 2 teaspoon salt

  • 1 teaspoon paprika

  • 1 teaspoon allspice

  • ½ teaspoon black pepper

  • ½ teaspoon nutmeg

  • ¼ teaspoon cinnamon

Fresh Mango Salsa:

  • ⅓ cup mango, small dice

  • 2 each lime juice

  • ¼ cup cilantro

  • ¼ cup jalapeno, small dice

  • 1 Tablespoon olive oil

  • ¼ cup red bell pepper, small dice

Plating Garnish:

  • 4 each Naan bread, toasted

  • ¼ cup cilantro, fresh and whole leaves picked

Preparation

For the Springer Mountain Farms © Jerk Chicken:

  1. In a mixing bowl, add cayenne powder, onion powder, thyme, sugar, salt, paprika, allspice, black pepper, nutmeg, and cinnamon; mix together until well incorporated

  2. On a clean cutting board, lay chicken flat and evenly distribute dried ingredients in mixing bowl as well as parsley; flip chicken and repeat on other side

  3. Place dutch oven (5 ounce) over medium-heat and add canola oil

  4. Carefully place chicken skin side down onto dutch oven
    Note: to be extra cautious, place chicken down and away to prevent oil from splashing onto you 

  5. Cook skin side down for 5-7 minutes or until skin is crispy then flip chicken over with tongs; cook for another 5-7 minutes or until internal temperature reaches 165 F 

  6. Turn heat off, place chicken skin side up on a clean cutting board and let it rest for 2-3 minutes

  7. Now slice breast on the bias (slice chicken against the grain) in 1 inch slices

  8. Set aside until Plating

For Fresh Mango Salsa:

  1. In a medium mixing bowl add all Fresh Mango Salsa ingredients and mix together well

  2. Cover bowl with plastic wrap and place in fridge until Plating

Plating:

  1. On a clean plate place desired amount of Springer Mountain Farms © Jerk Chicken

  2. Top with Fresh Mango Salsa and garnish with Plating Garnish

  3. Serve and enjoy!
