Springer Mountain Farms Boneless Skinless Chicken Breasts, cooked and diced into 1" pieces
1/2 cup
Celery, chopped
2 tablespoons
Shallot, minced

Gherkins, sliced small
3 tablespoons
Scallions, sliced on biase
1 cup
White grapes, halved
1/4 cup
Pecans, roughly chopped
1 cup
Mayonnaise
1 teaspoon
Brown mustard
2 cups
Parsley, chopped
4 tablespoons
Unsalted butter, softened

Croissants, sliced horizontally
2 cups
Arugula
Lemon pepper seasoning blend (optional)
  1. Add diced chicken to a large mixing bowl and add celery, shallots, gherkins, scallions, grapes, pecans, mayonnaise, mustard, & parsley together until well combined.
  2. If toasted bread is desired, coat each slice of croissant with softened butter in a thin layer and heat over medium heat in a skillet for 2-3 minutes or until golden brown.
  3. Assemble sandwiches by placing arugula on bottom of croissant, topping with desired amount of chicken salad, adding lemon pepper seasoning blend if using and then topping with other half of croissant.
