Citrus Chicken Salad

Springer Mountain Farms Fully Gluten-Free Fully Cooked Breaded Breast Strips, heated following package instructions, chopped into bite size pieces
1 head
romaine lettuce, cleaned and chopped
1
orange, segmented
1
avocado, seeded and chopped
2
onions, sliced green
1/2 cup
crushed pretzels or pretzel chips**
  1. Heat breaded chicken strips according to package directions and cut into bite sized pieces.
  2. While chicken is heating, assemble the rest of the salad by placing chopped lettuce on a plate, adding orange segments, avocado pieces and chopped green onions.
  3. Top with cut up, heated chicken pieces, crushed pretzel pieces and drizzle with the Spicy Citrus Honey Mustard dressing.

Spicy Citrus Honey Mustard Dressing

1/2 cup
mayonnaise
1 tablespoon
stone ground mustard
1 tablespoon
honey
1 teaspoon
sriracha
2 tablespoons
orange juice
salt and pepper, to taste
  1. Whisk together all ingredients until a smooth consistency.
  2. Taste and adjust with additional salt and pepper if necessary.
  3. Best if made ahead of time so flavors combine.
  4. Store in an airtight container in fridge.
