Citrus Chicken Salad

Springer Mountain Farms Fully Gluten-Free Fully Cooked Breaded Breast Strips, heated following package instructions, chopped into bite size pieces
1 head
romaine lettuce, cleaned and chopped

orange, segmented
1
avocado, seeded and chopped
2
onions, sliced green
1/2 cup
crushed pretzels or pretzel chips**
- Heat breaded chicken strips according to package directions and cut into bite sized pieces.
- While chicken is heating, assemble the rest of the salad by placing chopped lettuce on a plate, adding orange segments, avocado pieces and chopped green onions.
- Top with cut up, heated chicken pieces, crushed pretzel pieces and drizzle with the Spicy Citrus Honey Mustard dressing.
Spicy Citrus Honey Mustard Dressing
1/2 cup
mayonnaise
1 tablespoon
stone ground mustard
1 tablespoon
honey
1 teaspoon
sriracha
2 tablespoons
orange juice
salt and pepper, to taste
- Whisk together all ingredients until a smooth consistency.
- Taste and adjust with additional salt and pepper if necessary.
- Best if made ahead of time so flavors combine.
- Store in an airtight container in fridge.
