Roasted Chicken á la Simon & Garfunkel

Ingredients

  • 1 whole SMF chicken

  • Salt and black pepper

  • 1 stick unsalted butter

  • 2 tablespoons chopped rosemary

  • 2 tablespoons chopped sage

  • 2 tablespoons chopped thyme

  • ¼ cup chopped parsley

  • Zest and juice of 1 lemon

  • 1 lemon, sliced

  • Sprigs of rosemary, sage, thyme, and parsley stems

Instructions

1) Heat oven to 425 degrees

2) Mix butter with lemon and chopped herbs

3) Season chicken inside and out with salt and pepper. Stuff cavity with lemon and herbs

4) Truss chicken with kitchen twine and place inside cast iron skillets. Roast for 45 minutes or until

done

5) Remove twine, transfer chicken to a plate to serve.
