Preparation

For the Spicy Mayo Sauce:

  1. In a small mixing bowl, combine all ingredients and mix until well integrated

  2. Set aside temporarily

For the Seared Marinated Springer Mountain Farms © Chicken Thighs:

  1. Next, in another mixing bowl, add thighs, Spicy Mayo Sauce, and salt (as needed). Mix well.

  2. With the grill pan over high heat, grill marinated chicken for 10-12 minutes on each side or until the internal temperature hits 165F. Using tongs, place onto a clean cutting board and allow chicken to rest for 3-5 minutes.

  3. Now with a clean knife, slice chicken into strips and set aside for Plating

For Plating:

  1. In a skillet, render bacon out until they are crispy, remove them from the pan and allow it to cool.

  2. Once bacon is cool to the touch, use a chef knife or a pair of scissors and cut the bacon into 1” chunks and set aside until Plating

  14. Serve and enjoy!
