What is the best way to cook a thigh?

Because of the higher fat content in a thigh, they work well for just about any cooking method: baking, roasting, grilling, deep frying, braising, stewing, etc. Note: If grilling, watch for flare ups as the fat renders out during cooking. Recommend cooking with an indirect heating method on the grill.

Why is my thigh so fatty?

Chicken thighs are a much fattier cut of meat than a breast, especially with the skin still attached, but this lends to a more intense, richer flavor than the leaner cuts of chicken.
