Bang Bang Grilled Chicken Tacos

Chicken Marinade
1.5 lbs
2 tablespoons
olive oil
2 teaspoons
garlic powder
1 teaspoon
salt
1/2 teaspoon
black pepper
1/2 teaspoon
chili powder
1/2 teaspoon
garlic powder
1/2 teaspoon
onion powder
- Cut chicken thigh meat into 1 inch pieces and place in a large bowl and toss in olive oil.
- Add dried ingredients and mix around until all of the pieces of chicken are mostly coated with the seasoning rub.
- Marinate for at least 2 hours or overnight.
- If using wooden skewers, make sure they have been soaked in water for at least 30 minutes to help prevent them from burning.
- When ready to grill, preheat the grill or griddle to high.
- Skewer chunks of thighs onto the wooden skewers, packing closely together, but not too tightly to help the chicken cook through properly.
- Place skewers on the grill with the turning edges closest to the outside of the grill.
- Cook for about 6-8 minutes per side or until the chicken reaches an internal temperature of 165 degrees.
- Remove from grill, drizzle with bang bang sauce and serve with warm street sized tortillas.
Bang Bang Sauce
1 cup
mayonnaise
1 1/2 tablespoons
sriracha sauce
1 tablespoon
Worcestershire sauce
2 tablespoons
honey
1 teaspoon
rice wine vinegar
- Mix all ingredients together in a small bowl and whisk until completely combined.
- Refrigerate until ready to use.
- Best made ahead so flavors can meld.
