medium red potatoes, diced evenly

- Wash potatoes and dice evenly.
- Toss them with olive oil and seasonings.
- Place in air fryer, being careful not to overlap.
- Air fry at 385°F for 20 to 25 minutes.
BBQ Chicken

5-6 oz
shredded mozzarella cheese
- While the potatoes are cooking in the air fryer, combine all of the dry ingredients in a small bowl: paprika, onion powder, mustard, parsley, brown sugar, salt, and adobo.
- Dice the chicken breasts into small cubes and add seasoning to evenly coat the chicken pieces.
- In an oven safe large skillet on medium high heat, add the olive oil.
- Once the oil heats up, place the chicken into the pan and cook on medium-high for 3-4 minutes each side.
- The internal temperature should reach 165°F.
- Then add the tomato paste and barbecue sauce.
- Stir this while cooking for one to two minutes, then add the potatoes and cheese.
- Place the skillet in the oven on 400°F until the cheese has melted, around 5 to 10 minutes.
