Bruschetta Feta Chicken Bake
1.5 lbs
salt & pepper, to taste
2 tablespoons
olive oil
1 cup
orzo pasta
1
jar of bruschetta
3-4 oz
spinach, chopped
2 cups
chicken stock or broth
8 oz
block of feta cheese
- Cut chicken breast into 1-inch pieces and season with salt and pepper.
- To a large oven safe pan, add olive oil over medium high heat.
- Add chicken and sauté for 3-5 minutes, browning slightly.
- Add orzo, bruschetta, spinach, chicken stock, and salt/pepper.
- Nestle block of feta in the middle of the pot and place the lid on.
- Place pan in the oven at 400°F for 15-20 minutes or until orzo is cooked through.
