Grilled Buffalo Chicken Salad

1 teaspoon
Salt
1/2 teaspoon
Pepper
1 teaspoon
Garlic powder
1/2 teaspoon
Onion powder
1/2 cup
Hot sauce*
5 oz container
Spring lettuce mix (or your preference of greens)
Blue cheese/ranch salad dressing
Grape or cherry tomatoes, quartered
Colby jack cheese**, finely shredded
Croutons
- Light grill to a medium high temperature.
- Lightly grease grill grates to prevent chicken from sticking to grate.
- Mix together salt, pepper, garlic powder and onion powder and season both sides of chicken.
- Place on hot grill grates and cook for about 10 minutes on the first side before flipping, making sure there are nice grill marks on the breasts.
- Grill the second side until internal temperature is at 165°F.
- When the internal temperature has reached 165°F, brush all the breasts with hot sauce and cook for a few more minutes to set the buffalo sauce on the chicken.
- Remove from grill and let rest for a few minutes while the salad is prepared.
- Plate the lettuce and drizzle with dressing.
- Add tomatoes, cheese and croutons.
- Slice or dice chicken breasts and top the salad with the cut pieces of chicken to serve.
