- Mix together all dressing ingredients in a bowl and set aside until ready to dress the salad.
- In a large bowl, combine the chicken, celery, scallions, bell peppers and blueberries.
- Gently toss the chicken mixture with desired amount of dressing and add additional salt and pepper if needed.
- Divide chicken mixture evenly between the 6 lettuce leaves and serve.
