Lazy Lasagna
2 tablespoons
olive oil, divided

3 teaspoons
Italian seasoning
28 oz
crushed tomatoes
2 cups
chicken broth
14 pieces
lasagna sheets (regular or gluten free)
1 cup
mozzarella cheese, shredded
fresh basil for garnish (optional)
- In a deep sauté pan, heat 1 tablespoon of olive oil and cook the ground chicken seasoned with salt and pepper to taste.
- When the chicken is cooked through, remove from pan.
- In the same pan, heat the remaining 1 tablespoon of olive oil and sauté the onion, bell pepper and minced garlic with salt, pepper, Italian seasoning, and garlic powder.
- Once the vegetables are translucent, add tomato sauce and chicken broth and mix well.
- Add cooked ground chicken back into the sauce and combine.
- Add in the lasagna sheets by standing them up across the pan.
- Once the sheets are all in the pan, press them down into the sauce, making sure to cover them completely with sauce.
- Cover with a lid and cook until noodles are done (approximately 10-14 minutes).
- Remove the lid and add the cheese evenly over the dish and shredded fresh basil if using.
- Allow this mixture to cook an additional 3 to 5 minutes or until the cheese has melted.
Variations
- Try Ravioli: Frozen ravioli are such an easy way to add flavor and extra cheese! They are a time saver but beware it will change the cook time for this recipe!
- Other Pasta Options: This lazy lasagna pasta can be made with any noodle of your choosing. Just throw it in the pan and let it cook up to al dente perfection! You can also use traditional lasagna pasta, as long as you do not have a gluten allergy.
- Make it Extra Cheesy: I used shredded mozzarella for a light topping. Try adding ricotta cheese or cream cheese to really get that comfort food feel in the dish.
