Slow Cooker Chicken

1.5 lbs
1 teaspoon
onion powder
1 teaspoon
garlic powder
1/2 teaspoon
ground cumin
1 teaspoon
paprika (not smoked)
1 teaspoon
salt
4
chipotles in adobo sauce
2-3 tablespoons
additional adobo sauce, to taste
3 tablespoons
honey
lime wedges, for serving
  1. Place the chicken in the bottom of a 6-quart or larger slow cooker.
  2. Sprinkle with onion powder, garlic, cumin, paprika, and salt.
  3. Then add the chipotles in adobo plus additional adobo sauce.
  4. Drizzle with honey.
  5. Cover and cook on low for 4 - 5 hours (or on high for 3 -4 hours), or until the internal temperature of the chicken has reached 165°F.
  6. Once cooked, uncover and allow the chicken to sit for 5 minutes.
  7. Shred with two forks.
  8. Stir the chicken in the remaining sauce left in the crockpot and serve immediately.
