Chicken and Vegetable Soba Noodle Stir Fry

Boiled Soba Noodles:

  • 3 bundles soba noodles

  • ¼ cup salt

  • 2¼ quarts water

Stir Fry Chicken and Vegetable Soba:

  • 1 Tablespoon canola oil

  • 2 each Springer Mountain Farms © chicken breast, boneless skinless, cut in ¾ inch cubes

  • 2 Tablespoons salt

  • 1 Tablespoon pepper

Cooked Stir Fry Vegetables

  • 2 cup broccoli, medium crowns

  • ¾ cup carrot, ¼” thick biased cut

  • 1 each jalapeno, sliced

  • 2 cups shiitake, cut into ¼” slices

  • 2 Tablespoon garlic, roughly chopped

  • 2 teaspoon ginger, julienned

  • ½ cup scallion ends, halved lengthwise

  • 1 each canned bamboo shoots

Stir Fry Sauce

  • ¼ cup tamari

  • 3 Tablespoon mirin

  • 2 Tablespoons brown sugar

  • 2 teaspoon rice wine vinegar


  • ½ cup cilantro, whole picked leaves

  • ¾ cup scallions, ¼” cut on biased


For Boiled Soba Noodles:

  1. In medium sauce pot over high heat, add water and salt and bring to a boil

  2. Once at a boil, add noodles into salted water and cook for 4-5 minutes or until tender, stir occasionally

  3. With a colander in the sink, pour noodles into colander - being careful not to burn oneself

  4. Rinse noodles with cold water for 1-2 minutes, removing starch from noodles. Note: add 2-3 Tablespoons of canola oil to noodles to help prevent noodles from sticking to one another

  5. Set aside until Stir Fry Chicken and Vegetable Soba

For Stir Fry Chicken and Vegetable Soba:

  1. In a wok over medium-high heat, add oil

  2. Evenly distribute salt and pepper onto chicken 

  3. Carefully place seasoned chicken into wok

  4. Using a wooden spatula, stir chicken every 3 minutes and cook until internal temperature reaches 165 F

  5. Next, add broccoli and carrots and give it all a quick stir; cook for 1-2 minutes or until broccoli turns bright green

  6. Proceed to add in garlic, ginger, and jalapenos; allow to cook while stirring for a minute

  7. Then add in shiitake and again, give all the ingredients in the wok with another stir. Cook for another 1-2 minutes

  8. Now add in all the ingredients as listed in Stir Fry Sauce

  9. Use wooden spatula to help scrape off all the fond; allow ingredients to all come together for another 2-3 minutes, while constantly stirring

  10. Add in Boiled Soba Noodles

  11. Using tongs, toss all the ingredients together until well integrated

  12. Turn heat off and set aside temporarily until Plating

For Plating:

  1. In a large plate using clean tongs, place desired amount of Chicken and Vegetable Soba Noodle Stir Fry 

  2. Garnish with desired amount of cilantro and scallion

  3. Serve and enjoy!
