Chicken Burrito Bowl

1 lb
Springer Mountain Farms Ground Chicken
2 cloves
Garlic, minced
1 teaspoon
Paprika
1 teaspoon
Cumin
1 teaspoon
Coriander
1 teaspoon
Black pepper
1/2 teaspoon
Chili powder
1
Lime, juiced
4 cups
Cooked rice*
1
Avocado, peeled, pitted and sliced
1/2 cup
Tomato, diced
1/4 cup
Plain low fat Greek yogurt
1/4 cup
Cilantro, roughly chopped
1/4 cup
Scallions, thinly sliced
  1. In a medium non-stick skillet, cook ground chicken over medium-high heat, breaking up chicken as it cooks for approximately 3-5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in paprika, cumin, coriander, black pepper and chili powder, stirring constantly for another minute.
  4. Add lime juice, and stir to combine.
  5. Serve over cooked rice and top with avocado slices, diced tomatoes, Greek yogurt, cilantro and scallions.
