This is a protein packed bowl of chili with lean ground chicken and 2 kinds of beans. Nicole loves using Springer Mountain Farms 99% Fat Free Ground Chicken because of the leanness and because it's made from all white meat. She likes to serve hers over a gluten-free cornbread but that's completely optional if you want a lower calorie meal.

red bell pepper, diced

tomato paste
14 oz
crushed tomatoes
3 cups
chicken broth
1 cup
water
1 can
red beans
1 can
black beans
2 tablespoons
garlic, minced
1/8 teaspoon
ground jalapeno
2 teaspoons
chili powder
1 1/2 teaspoons
salt
1 teaspoon
garlic powder
3/4 teaspoon
onion powder
1 teaspoon
ground mustard
1 teaspoon
cumin
  1. Sauté ground chicken, onions and garlic for 4 minutes over medium high heat in a Dutch oven or large, deep pan.
  2. Add the remaining ingredients, stir well and bring to a boil.
  3. Reduce heat to simmer, cover and cook for an additional 1 1/2 hours to 2 hours, stirring occasionally.
