Chicken Swedish Meatballs

Slices white bread, cut into small cubes

Unsalted butter
1/3 cup
All purpose flour

Chicken broth/stock
1/4 teaspoon
Salt
1/4 teaspoon
Ground white pepper
3/4 cup
Sour cream
2 tablespoons
Fresh dill, chopped
Cooked egg noodles or mashed potatoes, for serving
- Place cubed bread in a large mixing bowl and pour milk over cubes, tossing to coat; allow to soak up milk.
- In a small sauté pan, melt butter over medium heat and add onions, stirring occasionally until translucent (about 3-5 minutes).
- In the bowl with soaked bread cubes, add ground chicken, onions, egg yolks, salt, pepper, nutmeg and allspice, combining all together and mixing well; add bread crumbs if you prefer a firmer meatball.
- Shape the meat mixture into 1" meatballs and place in air fryer basket (without touching).
- Cook in air fryer at 375°F for approximately 5-8 minutes until golden brown.*
- Make the gravy for the meatballs by melting 6 tablespoons of butter in a tall-sided skillet over medium heat.
- Whisk in flour and let cook for a few minutes until a nice light brown color; whisk in the chicken broth until mixed well.
- Season with salt and pepper and continue stirring until it begins to thicken.
- Whisk in the sour cream and chopped fresh dill until well combined.
- Add meatballs to the pan, cover with a lid and turn down to a low simmer, stirring occasionally so meatballs and sauce don't stick to the bottom of the pan; cook for about 15-20 minutes longer.
- Garnish with additional chopped fresh dill or parsley and serve over cooked egg noodles or mashed potatoes.
NOTES
*Meatballs can also be cooked in oven at 375°F for about 15-20 minutes or fried in a pan with oil before adding to creamy gravy.
