Creamy Lemon Chicken

1 cup
sliced onions

garlic cloves, minced
3 tablespoons
flour, divided
1 tablespoon
Italian seasoning
Salt and pepper, to taste
1 cup
coconut milk (or milk of choice)
1/2 cup
chicken broth

lemons
Olive oil
- Slice chicken breasts in half to decrease cook time.
- Sprinkle with salt, pepper, and 1 tablespoon of flour on both sides.
- Add about 2-3 tablespoons of olive oil to a skillet over medium high heat.
- Sear chicken until mostly cooked through (it will finish in the sauce). This should take 4-5 minutes per side; remove chicken from pan, set aside.
- In the same pan, add 1 tablespoon olive oil.
- Toss in your onions, and cook 1-2 min.
- Add 2 tablespoons of flour, Italian seasoning, pinch of salt and pepper, and stir together.
- Mix in milk, broth and juice of 1 lemon, and bring to boil.
- Reduce to simmer, and add chicken to the sauce.
- Sprinkle with a little more salt and slice up a lemon and scatter it in the pan.
- Let chicken simmer in sauce for 3-5 min.
- Serve over noodles
