Ground Chicken Meatloaf (Gluten Free)

A super easy ground chicken meatloaf that comes together in just a few minutes. Use gluten free bread crumbs and non-dairy milk to make it Gluten Free and Dairy Free.

Meatloaf

1 lb

eggs, room temperature
1 1/4 cup
gluten free bread crumbs
1/4 cup
unsweetened almond milk or milk of your choice
3/4 cup
parmesan cheese, grated
3 tablespoons
dried parsley
3/4 teaspoon
salt
1/4 teaspoon
garlic powder
1/4 teaspoon
dried mustard
1/2 teaspoon
black pepper
1/2 tablespoon
tamari
1 3/4 tablespoons
Worcestershire sauce
2 tablespoons
tomato paste
  1. Preheat oven to 350 degrees.
  2. Lightly grease a loaf pan.
  3. In a large size bowl, combine bread crumbs, parmesan, pepper, dry mustard, garlic powder, salt, and parsley and stir well.
  4. Add ground chicken and give this a good mix.
  5. Add eggs, tomato paste, milk, and Worcestershire sauce. Using your hands combine all the ingredients together.
  6. In a small bowl, mix together the brown sugar, Worcestershire sauce, and ketchup to make the glaze.
  7. Fold the ground chicken mixture into the loaf pan. Then pour the glaze on top of the mixture.
  8. Bake uncovered  until the internal temperature reaches 165 degrees (approximately 90-100 minutes). The meatloaf should not be pink at all when sliced.
  9. Allow to cool for 15 minutes before removing from the loaf pan. Using a spatula at each end, you can remove the loaf from the pan.
  10. Slice and serve.
