Yogurt Marinated Chicken
1 1/2 lbs
1/3 cup
2% Greek yogurt
1/4 cup
olive oil
1 tablespoon
smoked paprika
1 tablespoon
turmeric
1 tablespoon
coriander, ground
1 teaspoon
salt
1 teaspoon
black pepper
2 tablespoons
chives, chopped
2 tablespoons
cilantro, chopped
5 cloves
garlic, minced
- Mix all ingredients together in a large bowl.
- Cover, refrigerate and marinate for at least 45 minutes (or up to 4 hours).
- Preheat the oven to 425°F.
- Spray a baking sheet with cooking spray and arrange the marinated chicken on it.
- Bake for 25 minutes or until chicken is golden brown, flipping halfway through cooking time.
Note from Jess:
To assemble as a superfood bowl add your favorite grains, lettuce, fresh vegetables, feta cheese, fresh herbs, crunchy pita chips and desired sauced to a large bowl. Top with the cooked chicken and enjoy!
