Using Greek yogurt for a chicken marinade helps to seal in moisture, adds flavor and keeps it healthier than sugar based marinades and dressings. Golden Yogurt Marinated Chicken is great for salads, superfood bowls or wrapped in a pita pocket with fresh veggies.

Yogurt Marinated Chicken

1 1/2 lbs
1/3 cup
2% Greek yogurt
1/4 cup
olive oil
1 tablespoon
smoked paprika
1 tablespoon
turmeric
1 tablespoon
coriander, ground
1 teaspoon
salt
1 teaspoon
black pepper
2 tablespoons
chives, chopped
2 tablespoons
cilantro, chopped
5 cloves
garlic, minced
  1. Mix all ingredients together in a large bowl.
  2. Cover, refrigerate and marinate for at least 45 minutes (or up to 4 hours).
  3. Preheat the oven to 425°F.
  4. Spray a baking sheet with cooking spray and arrange the marinated chicken on it.
  5. Bake for 25 minutes or until chicken is golden brown, flipping halfway through cooking time.

Note from Jess:

To assemble as a superfood bowl add your favorite grains, lettuce, fresh vegetables, feta cheese, fresh herbs, crunchy pita chips and desired sauced to a large bowl. Top with the cooked chicken and enjoy!
