Grilled Chicken Caprese

Grilled Chicken Caprese

Springer Mountain Farms Boneless Skinless Breasts
Salt & Pepper, for seasoning chicken
Vegetable oil, for grill to prevent sticking
1 ball
Fresh mozzarella, cut into 6 slices
1 container
Cherry tomatoes, quartered
2 tablespoons
Fresh basil, sliced or chopped
1/2 tablespoon
Olive oil
1/2 teaspoon
Salt
1/4 teaspoon
Pepper
Balsamic vinaigrette or Balsamic glaze
  1. Heat grill or grill pan to medium high.
  2. Season both sides of chicken breasts with salt and pepper.
  3. Wipe grill/grill pan with vegetable oil to prevent sticking.
  4. Place chicken on grill and cook for about 5-8 minutes per side, or until internal temperature reaches 165°F.
  5. Remove from grill, place slices of mozzarella on each piece of chicken, and keep warm for serving.
  6. In a small bowl, mix tomatoes, basil, olive oil, salt and pepper until combined.
  7. To serve, top each cheese covered piece of chicken with the tomato mixture and drizzle with balsamic vinaigrette or balsamic glaze.
