1 1/4 cup
gluten free bread crumbs
1/4 cup
unsweetened almond milk or milk of your choice
3/4 cup
parmesan cheese, grated
3 tablespoons
dried parsley
3/4 teaspoon
salt
1/4 teaspoon
garlic powder
1/4 teaspoon
dried mustard
1/2 teaspoon
black pepper
1/2 tablespoon
tamari
1 3/4 tablespoons
Worcestershire sauce
2 tablespoons
tomato paste
- Preheat oven to 350 degrees.
- Lightly grease a loaf pan.
- In a large size bowl, combine bread crumbs, parmesan, pepper, dry mustard, garlic powder, salt, and parsley and stir well.
- Add ground chicken and give this a good mix.
- Add eggs, tomato paste, milk, and Worcestershire sauce. Using your hands combine all the ingredients together.
- In a small bowl, mix together the brown sugar, Worcestershire sauce, and ketchup to make the glaze.
- Fold the ground chicken mixture into the loaf pan. Then pour the glaze on top of the mixture.
- Bake uncovered until the internal temperature reaches 165 degrees (approximately 90-100 minutes). The meatloaf should not be pink at all when sliced.
- Allow to cool for 15 minutes before removing from the loaf pan. Using a spatula at each end, you can remove the loaf from the pan.
- Slice and serve.
