Healthy Chicken Jambalaya

Cooking spray
6 oz
Chicken sausage, cooked and thinly sliced

Large onion, diced
1
Green bell pepper, seeded and diced
2
Stalks celery, diced
3 cloves
Garlic, minced
1/4 teaspoon
Cayenne pepper
1 teaspoon
Dried thyme
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1 bag
Springer Mountain Farms Fresh Oven Roasted Fully Cooked Chicken Breast Strips, diced
1 can
Diced tomatoes with juice
3 tablespoons
Tomato paste
2 cups
Fat free chicken broth or stock
1 cup
Long grain white rice, uncooked
Fresh parsley, chopped for garnish
  1. Coat a large pan with cooking spray.
  2. Over medium-high heat, sauté sausage until edges crisp and meat starts to brown.
  3. Add onion, green pepper and celery to the pan and sauté until tender.
  4. Stir in garlic and cook another minute.
  5. Reduce heat and stir in cayenne pepper, thyme, salt and pepper.
  6. Stir in chopped chicken, diced tomatoes, chicken broth and uncooked rice and bring to a simmer; cover and cook until rice is tender, about 25 minutes.
  7. Garnish with fresh chopped parsley for service.
