Honey Garlic Chicken

1 tablespoon
Vegetable oil
1 tablespoon
Sesame oil
4 cloves
Garlic, peeled & minced
1 tablespoon
Ginger, minced
3 tablespoons
Soy sauce
3 tablespoons
Honey
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/2 teaspoon
Onion powder
Chicken Marinade
2 lbs
Springer Mountain Farms Boneless, Skinless Chicken Breasts or Thighs, cut into bite sized pieces

Sweet bell pepper (any color), seeded and cut into bite sized pieces
1
Sweet onion, peeled & chopped into bite sized pieces
1 tablespoon
toasted sesame seeds
Cilantro leaves, cleaned & torn
  1. Mix marinade ingredients in a small bowl until well combined; reserve 1/4 of marinade to use as a glaze at the end of cooking (refrigerate until needed).
  2. Place chicken in a disposable zip top bag or bowl & pour remaining marinade over chicken; toss to coat well, & place in the refrigerator for at least 1 hour or up to 24 hours.
  3. Fire up your griddle or cast iron skillet on the grill to a medium high heat.
  4. Remove chicken from marinade (discarding any that was used with the chicken), & place on hot griddle or grill pan.
  5. Add veggies & cook for about 8-10 minutes, stirring as needed to get good caramelization on the chicken & vegetables.
  6. Pour reserved marinade/glaze over chicken & toss until warm.
  7. Remove from heat, sprinkle with toasted sesame seeds & cilantro.
  8. Great served over rice, with potatoes or a green salad.
