mayonnaise
1/2 cup
Greek yogurt
1/2 cup
Caesar dressing
1/3 cup
parmesan cheese, grated
1 tablespoon
oil from sun-dried tomatoes

garlic cloves, minced
1/4 cup
fresh basil leaves, chopped
1 teaspoon
fresh oregano, chopped
1/4 teaspoon
red pepper flakes
salt & pepper, to taste
  1. Place all of the dressing ingredients in a bowl and whisk until combined.
  2. Refrigerate until ready to toss with salad ingredients.

Pasta Salad

pasta (any shape), cooked and cooled
1 cup
cherry tomatoes, halved
1/2 cup
sun-dried tomatoes, chopped
1/4 cup
fresh basil leaves, chopped
1/4 cup
parmesan cheese, shredded
2 cups
baby spinach leaves
2 cups
fresh mozzarella pearls or balls
  1. In a large bowl, combine chicken,  cooked & cooled pasta, both tomatoes, basil, parmesan cheese, spinach and cheese.
  2. Pour dressing over the pasta mixture and toss to coat evenly.
  3. Refrigerate for at least 1 hour before serving to allow flavors to meld.
