Tzatziki Chicken Pasta Salad

English cucumber, divided in half
1 cup
plain Greek yogurt
2 tablespoons
lemon juice
1/4 cup
olive oil
1 clove
garlic, minced
1 teaspoon
salt
2 tablespoons
dill, chopped
2 tablespoons
mint, chopped
1 pint
grape or cherry tomatoes, halved
1/2 cup
Kalamata olives, pitted and halved
1
bell pepper, diced
1/2 cup
pickled red onion or diced fresh red onion
8-12 ounce
box pasta, cooked to according to package directions

feta cheese, crumbled
Salt and pepper, to taste
  1. Make the Tzatziki sauce by grating half of the cucumber over a few paper towels, and squeezing out the excess moisture.
  2. Add the drained, grated cucumber, yogurt, lemon juice, garlic, mint and dill to a bowl and combine until mixed well.
  3. Dice the rest of the cucumber and add to a large bowl with the cooked, dice chicken, cooked pasta, sliced tomatoes & olives, bell pepper, red onion and feta cheese.
  4. Add desired amount of Tzatziki sauce to the bowl and toss to combine.
  5. Season with salt and pepper, to taste and add more crumbled feta cheese if desired.
