Sheet Pan Caprese Chicken Dinner

Not only is this chicken caprese dish easy to put together as a one pan sheet pan meal, but also looks impressive with bright colors of red and green from the vegetables that roast alongside the chicken breasts. It's a feast for the eyes and the stomach!

Sheet Pan Dinner

1.5 lbs
1 pint
cherry tomatoes
6 oz
fresh mozzarella, sliced
1/4 cup
olive oil
salt & pepper, to taste
Italian seasoning
balsamic glaze
1 lb
fresh asparagus (optional)
  1. Preheat oven to 425°F.
  2. Place chicken breast on baking sheet.
  3. Scatter tomatoes around each piece of chicken.
  4. Drizzle everything with olive oil and season liberally with salt, pepper, and Italian seasoning, and toss to coat.
  5. Trim ends of asparagus and add to corners in little handfuls. (other good green vegetables to use for roasting in place of asparagus: green beans, zucchini, green pepper, or brussels sprouts)
  6. Place in oven at 425°F for 15-20 min.
  7. When tomatoes start to look like the skin is wilting, remove from oven and add mozzarella cheese slices on top of each piece of chicken.
  8. Return to oven for a few minutes until cheese has melted.
  9. Remove from oven, drizzle with balsamic glaze and sprinkle with fresh basil.
  10. Great served with rice or a salad.
