One Pot Chicken Parmesan

1 8 ounce box
Noodles (uncooked)
2
Carrots, chopped
1
Onion, diced
2 cloves
Garlic, minced
1 tablespoon
Italian seasoning

1 24 oz jar
Pasta sauce
1 can
Diced tomatoes with liquid from can
1 cup
Chicken stock or water
1 cup
Shredded mozzarella or Italian blend cheese
2 cups
Grated Parmesan (divided)
1 cup
Breadcrumbs
  1. Chop carrots and onion into small dice.
  2. Chop chicken into large chunks.
  3. In large skillet, add a few tablespoons olive oil over high heat, & add chicken but don™t stir (this helps get a little bit of a sear on the chicken).
  4. Cook about 5 minutes & reduce heat to medium.
  5. Add onions and carrots, stir and cook a few minutes.
  6. Add garlic, heavy pinch of salt and pepper, and Italian seasoning.
  7. Add marinara sauce, diced tomatoes, uncooked pasta, 1 cup of parmesan and chicken stock.
  8. Stir, simmer and cover with lid.
  9. Cook about 12-15 min or until noodles are cooked, stirring occasionally. Stir in mozzarella cheese.
  10. In bowl, mix breadcrumbs and remaining 1 cup of parmesan, & spread over dish.
  11. Broil on high for 2-3 minutes or until cheesy bread crumb mixtures begins to brown.
