Mushroom Swiss Chicken Burger with Arugula and Caramelized Onions

1 lb
Springer Mountain Farms Chicken Burgers
2 teaspoons
Vegetable oil
4 slices
Swiss cheese

Burger buns, toasted

Caramelized onions
Sauteed mushrooms

Large sweet onions, halved & sliced
1 tablespoon
Olive oil
1 tablespoon
Butter
1 teaspoon
Thyme, ground
1/2 cup
Chicken broth
1/2 teaspoon
Salt
1 teaspoon
Black pepper

Baby Portobello mushrooms, cleaned & sliced
1 teaspoon
Olive oil
1 1/2 teaspoons
Butter
2 teaspoons
Worcestershire sauce
2 teaspoons
Chives, cut thin
  1. Preheat large pan over medium heat.
  2. Add vegetable oil and carefully swirl the oil to coat the pan.
  3. Place burger patties into the pan and cover with a lid; cook the first side for 3-4 minutes and then flip.
  4. Top each burger patty with a single slice of cheese, cover with lid, and cook for an additional 3-4 minutes or until the internal temperature reaches 165°F.
  5. To assemble burger, spread bottom of bun with 1 tablespoon of the Secret Sauce.
  6. Add the burger patty with cheese and top with caramelized onions, mushrooms, arugula and top bun.
  7. Cook onions, olive oil, butter, and thyme in a large pot over medium high heat for about 30 minutes, stirring occasionally.
  8. Deglaze the pan with chicken broth scraping the bottom of the pan to release the brown bits on the bottom of the pan (the fond).
  9. Cook for 5-7 minutes or until all of the liquid has evaporated.
  10. Season with salt and pepper and hold for burger assembly.
  11. Dry sear the sliced mushrooms by adding them to a large sauté pan over medium-high heat, cooking for 3-5 minutes, stirring occasionally.
  12. Remove any excess liquid, and add remaining ingredients.
  13. Sauté over medium-high heat for another 3-5 minutes or until golden brown.
  14. Hold for burger assembly.
