olive oil
1 1/2 tablespoons
smoked paprika
1/2 tablespoon garlic powder
1 1/4 teaspoon
salt
1/2 teaspoon
black pepper
1 teaspoon
thyme
1/2 teaspoon
parsley
1 lb
small red potatoes, cut in half
12 oz
fresh green beans
  1. Preheat oven to 400°F.
  2. In a small bowl, combine all seasonings and mix well: paprika, garlic powder, salt, pepper, thyme, and parsley.
  3.  Pat the chicken thighs with paper towel and then place into a large bowl.
  4. Add the green beans, red potatoes, olive oil, and seasonings to the bowl.
  5. Using your hands mix well to ensure everything is evenly coated.
  6. Place the potatoes and green beans in a single layer on a large baking sheet.
  7. Place a baking rack over the tray and  place the chicken thighs on the baking rack, leaving at least 1 inch in between each chicken thigh so they don’t sweat on each other.
  8. Place in the oven and bake for 45 to 48 minutes or until the internal temperature of your chicken is 165°F.
  9. Add the chicken into the tray with the potatoes and green beans and brush some of the juices onto the chicken and potatoes.
