Southwestern Skillet Chicken
1 lb
Salt
1 teaspoon
Black pepper
1 teaspoon
Red pepper flakes
2 teaspoons
Paprika
2 teaspoons
Cumin powder
1 teaspoon
Cayenne pepper

Red onion, chopped small
2 cloves
Garlic, minced

Red bell peppers, chopped

Black beans
2 cups
Cheddar, shredded
Fresh cilantro, chopped
- Season chicken with salt and mixture of cayenne pepper, paprika, black pepper, red pepper flakes and cumin powder.
- Heat oil in medium to high heat pan.
- Sear chicken and cook for about 7 minutes until the internal temperature of the chicken hits 165°F. Remove chicken onto a clean plate.
- Add more oil then add onion, garlic and red pepper and cook until tender.
- Mix in the black beans and cook for 2-3 minutes.
- Transfer mixture to a clean bowl.
- Reduce heat to low and return chicken to skillet. Top the chicken with cheddar and onion, garlic, pepper, black bean mixture.
- Cover the pan with a lid, and allow the trapped heat to melt the cheddar cheese.
- Plate chicken and garnish with cilantro.
- Serve and enjoy!
