Southwestern Skillet Chicken

1 lb
Salt
1 teaspoon
Black pepper
1 teaspoon
Red pepper flakes
2 teaspoons
Paprika
2 teaspoons
Cumin powder
1 teaspoon
Cayenne pepper
2 tablespoons
Oil
1
Red onion, chopped small
2 cloves
Garlic, minced
2
Red bell peppers, chopped
15 oz
Black beans
2 cups
Cheddar, shredded
Fresh cilantro, chopped
  1. Season chicken with salt and mixture of cayenne pepper, paprika, black pepper, red pepper flakes and cumin powder.
  2. Heat oil in medium to high heat pan.
  3. Sear chicken and cook for about 7 minutes until the internal temperature of the chicken hits 165°F. Remove chicken onto a clean plate.
  4. Add more oil then add onion, garlic and red pepper and cook until tender.
  5. Mix in the black beans and cook for 2-3 minutes.
  6. Transfer mixture to a clean bowl.
  7. Reduce heat to low and return chicken to skillet. Top the chicken with cheddar and onion, garlic, pepper, black bean mixture.
  8. Cover the pan with a lid, and allow the trapped heat to melt the cheddar cheese.
  9. Plate chicken and garnish with cilantro.
  10. Serve and enjoy!
