Grilled Chicken Teriyaki and Cauliflower Rice Bowl

1 Tablespoon
Olive oil
10 oz bag
Riced cauliflower, frozen
2 cups
Peas and carrots, frozen
2 tablespoons
Pickled ginger, finely diced
1 tablespoon
Five spice powder
1/8 teaspoon
Kosher salt
8 oz
Springer Mountain Farms Fresh Fully Cooked Grilled Chicken Breast Strips, cut into bite sized chunks
2 cups
Fresh pineapple, cut into bite sized pieces
1/4 cup
Teriyaki sauce
2
Green onions, thinly sliced
Optional toppings: sriracha sauce, toasted sesame seeds, toasted sesame oil
  1. Heat oil over medium-high heat in a large skillet or wok.
  2. Add riced cauliflower, peas and carrots, pickled ginger, five spice powder and salt and sauté 5-7 minutes until heated through.
  3. Stir in grilled chicken, pineapple and teriyaki sauce, and continue to cook 3-4 minutes until chicken is heated through.
  4. Serve in bowls with green onion slices and optional toppings if desired.
