Spicy Chicken Hominy Soup

Olive oil
1/4 cup
White onion, chopped
1/4 cup
Red onion, chopped
3 cloves
Garlic, minced
1
Jalapeño, sliced
10 oz can
Hominy
12 oz can
Black beans
1 cup
Tomatoes, diced
16 oz
Tomato paste
32 oz
Chicken broth
1 tablespoon
Chili powder
1 1/2 tablespoons
Cumin, ground
1 teaspoon
Oregano, dried
1 pinch
Cayenne pepper
Salt and pepper, to taste
Cilantro, sour cream, and avocado for garnish
  1. Heat oil over medium to high heat.
  2. Add chicken, onion, garlic, jalapeño and cook for 7 minutes until chicken reaches internal temperature of 165°F.
  3. Stir in hominy, beans, tomatoes, tomato paste, chicken broth, and seasoning.
  4. Mix well and bring to a boil.
  5. Once boiling, turn the heat off and let it simmer while covered for about 2 minutes until the flavors combine.
  6. Garnish with avocado and cilantro.
  7. Serve and enjoy!
