Bao and Broth, Chef Bruce Moffett’s fifth restaurant in his Charlotte line-up, released its full menu ahead of their grand opening later this Summer.

This steamed bun and ramen concept will open inside Optimist Hall, Charlotte’s first large-scale food hall. The building is set to open this summer in the Optimist Park neighborhood, adjacent to both NoDa and Uptown(1115 N. Brevard Ct.).

Chef Larry Schreiber is a partner on the restaurant and will serve as executive chef. He previously held the position of executive chef at Good Food on Montford (another Moffett Restaurant Group concept) but will now focus on this “personal passion project,” as Bao and Broth was described in a press release.

Chef Schreiber will use Springer Mountain Farms Chicken throughout the menu, including a Ginger Chicken ramen topping, a Fried Chicken Bun, and a creamy-style chicken broth. If guests choose the ramen route, they’ll pick a broth, one protein, and one topping. Additional proteins run $3 each, and extra toppings are $2 each.

Several baos are available including the Belly Bun with char siu pork belly, the Bulgogi Bun, the Schnitzel Bun, and the Falafel bun. You can turn any bun into a rice bowl for $12.

Other highlights include Rice Cakes + Pork Belly Kimchi, sides such as Togarashi Fries, Deviled Shoyu Eggs, and Spicy Cucumbers, and Coconut Macarons for dessert.
