Chicken Cordon Bleu w/ Charred Broccoli

Ingredients

Chicken Cordon Bleu

  • 4 each Springer Mountain Farms © chicken breast, boneless/skinless

  • 4 ounces shaved prosciutto

  • 4 ounces port salut cheese, cut into batons

  • 2 cups panko crumbs

  • ½ cup chopped parsley

  • 2 cups all-purpose flour

  • 8 each eggs, whisked

  • 2 quarts canola oil

Charred Broccoli

  • 2 pounds broccoli, cut into florets

  • ½ cup olive oil

  • ¼ cup apple cider vinegar

Preparation

For the Chicken Cordon Bleu:

  1. On a clean cutting board, create a pocket with the chicken breast; wash hands

  2. Next, wrap the cheese batons with prosciutto and set aside

  3. Stuff prosciutto wrapped cheese into the chicken breast pockets; sew breast with skewers and set aside

  4. Now it’s time to setup your breading station! On your kitchen counter, set out three shallow pans. The first, pour the whisked egg. The second, mix flour with panko crumbs and parsley. The third, keep vacant for the breaded skewers.

  5. With each skewer, fully submerge skewered chicken in egg, then generously dredge egg coated skewers in the flour/panko mixture, and once fully coated set aside in the third shallow pan.

  6. Now take a 12” high walled cast iron skillet over medium heat, add canola oil and heat until 350F

  7. Once oil is heated to 350F, carefully lower skewered chicken into the oil and fry each side for 7-10 minutes or until chicken is at 165F.

  8. Remove once golden brown and place on a clean plate

  9. Set aside until Plating

For the Charred Broccoli:

  1. In a mixing bowl, toss broccoli florets with oil, salt and pepper

  2. Next pre-heat 12” cast iron pan over medium-high heat; once pan is slightly smoking, add tossed broccoli and char until edges are blackened

  3. Drizzle Apple Cider Vinegar and remove from heat

  4. Set aside until Plating

Plating:

  1. At the center of a large plate, add Chicken Cordon Bleu

  2. Next, place the Charred Broccoli on the side.

  3. Now serve and enjoy!
